Cacio e Pepe is a creamy Roman dish which is not made of cream at all, but includes basic, yet delicious ingredients such as Pecorino Roman cheese (sheep’s cheese), black pepper and pasta. So why do you need a cooking class to teach you such a simple recipe? This is no simple dish to make. Cacio e Pepe involves technique, timing and skills. Italian food is best known for simple ingredients and traditional skills. This is exactly what Dario will share with you. If you have these ingredients, join in the cooking with Dario! He will tell you why you should never use any other cheese than Pecorino Romano and what makes this dish one of the most popular in Rome!

Spaghetti all’Amatriciana is yet another past dish you will find in any authentic Roman restaurant. This too is a dish with simple ingredients, but it surely packs a punch and has slight variations to it, depending on which Roman you ask. Dario will walk you through what you will need and introduce you to the star ingredient of the dish – guanciale (pig cheek)! Do not worry if you cannot find guanciale in your local supermarket and still want to make this dish. Dario will tell you why guanciale is used, and the perfect alternative. Other Amatriciana ingredients include pasta, canned tomato, Pecorino Romano cheese, extra virgin olive oil and salt.
