Eggs are, of course, associated with Easter so this week our very own Marilee is preparing us for the coming holiday with an Easter Brunch Recipe that you can whip up at home for lunch! Called a frittata  in Italian,  this Italian-style omelet has endless variations and possibilities. Since I am not particularly skilled in “flipping” a frittata in the saucepan, we prefer our frittatas baked in the oven. Here’s our family’s favorite but feel free to substitute the artichokes with your own vegetable preferences (liked sautéed spinach, zucchini or broccoli)

Sausage and Artichoke Frittata Ingredients

1 Bouillon cube
1 Bell pepper
1 clove garlic
Chopped parsley and basil
Dry white wine
Olive oil
5-6 mild Italian sausages
1 med. onion, chopped
2 cup (16oz) potatoes cut into small bites
Grated Parmesan cheese
6 beaten eggs
salt & pepper
Grated bread crumbs

Sausage and Artichoke Frittata Preparation

frittata_recipe_livitaly3Peal outer leaves off of the artichokes until you’ve arrived at the very tender part. Cut off points. Cut in half scoop out feathery centers and then cut into very small pieces. Immerse the artichoke pieces in cold lemon water to keep them from turning brown. Dissolve the meat cube in a cup of boiling water to make broth. Drain the artichoke pieces and place in frying pan with olive oil, wine, dash of pepper, garlic (squeezed or finely chopped), chopped parsley and basil, and enough of the broth to cover. Let simmer until the artichoke pieces are tender.

Meanwhile, in another large skillet sauté the onions and sausages until thoroughly cooked.

While the sausage is cooking, either boil the potato pieces in boiling water or place in a microwave-safe plastic bag and microwave for 3-4 min. or until tender.

Add the potatoes and the cooked artichokes to the sausage, mix well and taste for salt and pepper.

Lightly oil (or use non-stick spray) a 9×13 pan. Spread the artichoke mixture evenly and cover liberally with grated parmesan. Pour the eggs (beaten with just a pinch of salt and pepper) over all and top with grated bread crumbs.

Bake in preheated 350° F. oven for 20-25 min. or until appears cooked and just slightly browned. Enjoy!
